Oatmeal Cookies


These are one of my favorite cookies. They’re simple and just plain good. I think they’re a great fall cookie, and I’ve been craving them for a while. They are great with a glass of milk, or some apple cider. Also great for tailgating, although they probably won’t last long. They do have a lot of sugar (which is probably why I like them so much) but you could probably put in less if you don’t have my sweet tooth. Also you could use corn flakes instead of Special K. This would cut the sweetness some. If you over-bake them they will be too crunchy and dry.




  • 1 cup oil
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups flour
  • 1 to 1.5 cups of oats
  • 1 cup crushed Special K


  1. Cream oil, sugar and eggs.
  2. Add remaining ingredients and mix well.
  3. Spoon onto a cookie sheet lined with parchment paper.
  4. Bake at 365° for 10 minutes… Important: Don’t over bake! They may still look a little moist after 10 minutes, but take them out and let cool for a bit on baking sheet.
